Development and Implemenation of technological processes to reduce microbial contamination in the poultry as well as pig slaughter process

The aim of the project “KontRed” is the development and implementation of processes to reduce the transmission of bacterial pathogens during slaughter processes. Therefore biological, chemical as physical measure shall be investigated regarding their effectiveness.
The subpackage airborne contamination will be handled by the HRI. The transmission of aerosols as well as droplets at different points of the process will be simulated numerically. Different particle sizes (e.g. because of evaporation) will be taken into consideration. The results will be used to develop protection concepts regarding airborne contamination.
The project will be lead by FU Berlin – Institute of Food Safety and Food Hygiene and BfR -Department Biological Safety and further partners from universities as well as industry will contribute their knowledge.
